- 1 1/4 cups almonds
- 1/8 tsp cinnamon
- 2 tbsp grated lemon peel
- 2 egg whites, beaten
- 1/4 cup raw honey
- 2 tbsp lemon juice
- Place the almonds in a food processor and pulse until coarsely ground. Add to a mixing bowl. Mix in the lemon peel and cinnamon.
- In a separate bowl, beat the egg whites. Add the honey and lemon juice, followed by the almond mixture.
- Using a teaspoon, drop the mixture on the baking sheet lined with parchment. Bake in the oven for 25 minutes at 250°C. Transfer to a rack to cool completely.
