Tasty Pancakes with Coconut Flour and Banana

It takes just 15 minutes to prepare these amazing coconut pancakes. Top them with any fruit and enjoy.

Preparation time: 10 minutes
Cooking time: 15 minutes
Serves:  4-5

Ingredients:

  • 1 banana
  • 3 tbs organic coconut flour
  • 1 tbsp coconut milk
  • 1 1/2 tsp coconut oil
  • 2 tbsp maple syrup
  • 1 tsp baking soda
  • 4 organic eggs

Directions

  1. Add the coconut oil, coconut milk/water, maple syrup and eggs to a large mixing bowl and beat well. Gradually stir in the baking soda and coconut flour until smooth.
  2. Add the mashed banana and mix well to combine. Generously oil a skillet with coconut oil and set over medium-low heat. Place about 2 tablespoons of batter for each pancake in the skillet and fry for 2-3 minutes, gently flattening with spoon. Turn over to brown the other side.
  3. Place the done pancakes onto a serving plate, garnish with sliced banana and serve.
