It takes just 15 minutes to prepare these amazing coconut pancakes. Top them with any fruit and enjoy.

Cooking time: 15 minutes
- 1 banana
- 3 tbs organic coconut flour
- 1 tbsp coconut milk
- 1 1/2 tsp coconut oil
- 2 tbsp maple syrup
- 1 tsp baking soda
- 4 organic eggs
- Add the coconut oil, coconut milk/water, maple syrup and eggs to a large mixing bowl and beat well. Gradually stir in the baking soda and coconut flour until smooth.
- Add the mashed banana and mix well to combine. Generously oil a skillet with coconut oil and set over medium-low heat. Place about 2 tablespoons of batter for each pancake in the skillet and fry for 2-3 minutes, gently flattening with spoon. Turn over to brown the other side.
- Place the done pancakes onto a serving plate, garnish with sliced banana and serve.
